Skinny Tomato Soup: A Special (and Healthy) Meal at Home
Sound familiar? It’s nice to go out to dinner on Valentine’s day. Heck, it’s pretty cliché at this point. But in my opinion, it’s even better to eat in. After all, there’s nothing more romantic than enjoying a delicious meal while saving time, money, and calories. …Okay, there probably IS something more romantic. Anyway…
My skinny tomato soup might be just what the love doctor ordered. It’s quick, easy to make, low on calories, and big on flavor. It’s reminiscent of fancy, $12-a-bowl restaurant tomato soup. As a result, it’s apropos for a Valentine’s day meal.
If I’m being honest, it’s actually great for any day of the year! If you’re craving healthy comfort food, my chunky, skinny tomato soup fits the bill. I’ve also included a bonus recipe for a simple, flavorful grilled cheese, because you just might want to add some sinfulness to your skinny meal.

Skinny Tomato Soup Ingredients
Note: This recipe easily doubles or triples to feed a family of 4 or more.
- 1 can condensed tomato soup (Healthy version)
- 1 can fire-roasted diced tomatoes
- 3/4 cup chicken stock
- 1 cup fresh spinach
- 4 slices turkey bacon
- 1 tbsp olive oil (Talcott Olive Oil is the only olive oil I use!)
- 1/4 tsp chopped rosemary
- 1/2 tsp Italian seasoning
- 1/4 tsp garlic powder
- Salt and pepper to taste
How to Make Skinny Tomato Soup
Step 1. In a saucepan, combine tomato soup, chicken broth, roasted tomatoes (Including juice), rosemary, Italian seasoning, and garlic powder. Simmer over medium-low heat, stirring occasionally.
Step 2. In a skillet, heat olive oil. Add turkey bacon. Cook over medium heat until firm. Turkey bacon doesn’t crisp up super well, so firm and cooked is what we’re going for.
Step 3. Cut cooked turkey bacon width-wise into 1/2-inch strips. Add to saucepan. Stir.
Step 4. Add spinach. Simmer for 2-3 minutes, stirring occasionally, until spinach is cooked. Add salt and pepper to taste.
See? It really is that simple!
Bonus Recipe: Spicy Bacon Grilled Cheese Sandwiches
My chunky, skinny tomato soup is so lean, you can afford a little grilled cheese action on the side!
Don’t worry, it’s not going to totally wreck your diet. It’s only slightly sinful. The recipe uses turkey bacon and cheese made with 2% milk. As a result, they help reduce the calories and fat in the sandwich. In the meantime, full-fat sriracha mayo is working hard to up the sinful goodness.
Paired together, the skinny tomato soup and spicy bacon grilled cheese sandwiches are a match made in heaven. (Cheesy, I know. Sorry.)
Spicy Grilled Cheese Ingredients
- 2 slices of bread per person (I like Sara Lee’s whole wheat 45-calorie bread)
- 1 slice of 2% cheese per person
- 2 slices turkey bacon per person
- Sriracha mayo
- 1 tbsp olive oil
How to Make Spicy Grilled Cheese Sandwiches
Step 1. In a skillet, heat olive oil. Add turkey bacon. Cook over medium heat until firm.
Step 2. Spread a thin layer of sriracha mayo on both sides of each slice of bread. Not a fan of spicy foods? Add my avocado white balsamic spread to the inside of each sandwich instead, and grill the sandwiches in an extra tablespoon of olive oil at step 4.
Step 3. Build sandwiches using 2 slices of bread (Captain obvious, right?), 2 slices of bacon, and 1 slice of cheese per sandwich.
Step 4. Grill sandwiches on both sides in skillet until cheese is melted and outside of bread is crisp.
Skinny Tomato Soup: Conclusion
Healthy, filling meals don’t have to require a lot of time, ingredients, or prep work. My chunky, skinny tomato soup with spinach and bacon is healthy comfort food at its finest. The spicy bacon grilled cheese sandwich is delicious dipped in the skinny tomato soup. With cheese and bacon abound, this guilt-free dinner feels downright decadent.
